Don't Monkey Around, Try Lemon Monkey Bread Today

It's good. A little too good.

 

As my father-in-law would say, this recipe will "shrink your jeans." The main ingredients are biscuits, butter and sugar -- health food, it isn't.

That said, if you have a little room to spare in your britches, you will certainly enjoy lemon monkey bread. The recipe only has four ingredients, it is quick to make and it is almost irresistibly tasty.

I found a version of this on Pinterest, but couldn't find the dinner rolls specified in the recipe. Being from the South, biscuits seemed like a perfectly suitable alternative, so I went with that. I'm going to call that decision a win. Try it and let me know what you think.

Ingredients:

1 12-ounce can of biscuits

1/2 cup granulated sugar

3 tbsp. butter, melted

1 tbsp. lemon zest

Directions:

Preheat oven to 400 degrees, spray 8 x 12 casserole dish with nonstick cooking spray.

Combine sugar and lemon zest in a large bowl. Cut biscuits into quarters. Toss biscuit pieces in lemon sugar mixture until completely coated.

Arrange sugared biscuit pieces in single layer in casserole dish. Sprinkle with remaining lemon sugar mixture and drizzle with melted butter.

Bake at 400 degrees for 12 minutes or until golden brown.

If desired, top with a lemon glaze (1/2 c. powdered sugar and 1 tbsp. lemon juice mixed together).

Thanks Stephanie. We all gave this recipe a thumbs up. I like it even better than cinnamon rolls or regular monkey bread.
