Easy Chicken Parmigiana Sandwich

Here's a quick and easy dinner for a busy weeknight!

 

Now that the holidays have passed, it's time to buckle down and get back in the daily swing of things.  I am always looking for quick fixes for dinners that everyone will eat and enjoy.  Just this weekend we tried out some messy, but yummy Chicken Parmigiana sandwiches that were a hit at my house. 

I fried up some fresh chicken, however this is a great recipe if you have some leftover chicken from a previous meal. In fact, using leftover chicken you have on hand makes this a super quick meal. Just warm up your chicken, heat your spaghetti sauce and voila, you are ready. 

For a really quick fix, lay the mozzarella cheese over the chicken to melt in microwave for a few seconds.  Serve this sandwich with a side of your favorite pasta or with some french fries.  Let me know what you think and if it goes over well at your house.

Chicken Parmigiana Sandwiches

Ingredients:
Chicken breasts cut into ½ -2 inch strips
½ tsp. salt
¼ tsp. pepper
1 tbsp. milk
1 cup vegetable or olive oil
2 eggs beaten well
thinly sliced mozzarella cheese
your favorite spaghetti sauce (I use Hunt's Traditional)
Large Italian sandwich buns/Hoagie rolls
1.5 cups Italian bread crumbs

Mix salt, pepper, bread crumbs and put in a bowl. Mix beaten eggs with milk in a separate bowl. Heat half of the cooking oil in skillet on med./high heat (until a cube of white bread browns evenly in 1 minute.)

(Note:  After I cook half of the chicken I start over with the other half of the cooking oil.)

Dip chicken strips in egg mixture, then in dry mixture and fry in skillet until cooked thoroughly, approximately three minutes per side. You can cut your chicken into pieces to check doneness.

While the chicken is cooking, heat the spaghetti sauce in separate pan.

When chicken is cooked, place on a bun and cover with mozzarella cheese slices (to help with melting cheese, place sandwich back in bread bag while the rest of the chicken is cooking).  When all the sandwiches are assembled, pour spaghetti sauce over the melted cheese and chicken and enjoy!
