I finally got around to visiting my garden (poor thing...the garden) this afternoon. My basil was plentiful, so getting long cuttings off the 4 plants seemed the thing to do. After arriving back inside, it hit me like a ton of sandy bricks that I had to do something with all that basil. But what?
I could dry it in my dehydrator. No, don't want to do that. I can buy it cheaper than I can dry it. I pondered freezing it, but had no idea how to begin. While washing dishes, a stunning thought hit me -- make basil pesto!
I did what I usually do when I have a burning question....googled the question on my computer. (Well, where else can you "google" something? Has to be on the computer, doesn't it?)
I made a double recipe, froze most of it, and put the rest in a pint jar in the refrigerator. I have already eaten a good chunk of what I put in the jar! It is DELICIOUS! Better than any I have ever bought....and that's not my doing...just the fact that it is fresh and homemade!

I used minced garlic from a jar in my refrigerator. I also used walnuts in place of pine nuts.
