Here's a quick and easy recipe that conveniently puts your meat and vegetables together in a single casserole. Heat up some rolls or biscuits for a side dish and you are all set with a hearty and delicious meal the whole family will enjoy.
1 pound ground beef
1 small onion, chopped
1 small green pepper, chopped
1 15-ounce can of whole kernel corn, drained
1 10.5-ounce can of cream of chicken soup
1/2 c. cheddar cheese, divided
1 4-ounce jar of pimientos, drained
2 tbsp. sour cream
1/4 tsp. ground black pepper
1 32-ounce bag of tater tots
Preheat oven to 375 degrees.
Saute green pepper and onion until tender. Remove to plate.
Cook ground beef until no longer pink.
Add green pepper and onion mixture to ground beef and then add corn, soup, 1/4 c. cheddar cheese, pimientos, sour cream and ground black pepper. Stir until well blended.
Layer half of the tater tots in a greased 3-quart casserole dish. Add ground beef mixture. Top with remaining tater tots and remaining cheddar cheese.
Bake at 375 for 20-25 minutes.
