Dacula Cook of the Week: Betty Barton

Barton's homemade peppermint ice cream recently won first prize at HUMC church cookout.

This week's Dacula Cook of the Week, Betty Barton, recently took home the top prize in an ice cream contest at the cookout.

When Barton entered her peppermint ice cream in Aug. 14 contest, she did not expect to win.

“I was totally surprised,” Barton said. “I did not think that the kids would vote for peppermint. But one of the children told me that the votes were split between mine and the chocolate.”

Barton’s prize winning peppermint ice cream is a cool refreshing dessert.

“I like the recipe because it is easy to do,” she said. “It is a pleasant dessert. It feels like a good cool mint in your mouth.”

Barton was happy to share her peppermint ice cream recipe with her Dacula friends and neighbors as she also received the recipe from a friend.

“I got the recipe from a friend many years ago,” Barton said.” “She specializes in making ice cream.”

There was one very important tip that Barton wanted to share.

“Make sure to grind the peppermints into a fine dust,” she shared. “Otherwise the candy will lump together in the ice cream.”

Peppermint Ice Cream

Ingredients:
1 pound peppermint candy
6 egg yolks
1 quart half/half
Pinch salt
4 cup milk
1 ½ cup sugar
1 pint whipping cream
2 tsp vanilla

Preparation:
1. Make a powder of candy in the food processor until smooth.  
2. Scald the quart of milk (8 min, med high in microwave)
3. In a large bowl, beat yolks lightly, add sugar and salt.   
4. Pour in scalded milk into bowl, and mix well.   
5. Cook in double boiler (glass or stainless) about 10 minutes until thick.   
6. Stir with wooden spoon.   
7. Add Peppermint candy mix to hot custard.   
8. Add vanilla, stir well and strain.  
9 Chill overnight add cream and freeze.   
Makes one gallon.
