Try This Easy and Delicious King Ranch Casserole

This spicy and cheesy casserole is a crowd pleaser.

Looking for something quick and easy to make for dinner? King Ranch casserole takes only a few minutes to prepare and just 30 minutes to bake.

If you are watching fat and calories, you can use fat-free soups and low-fat cheese. 

Ingredients:

1 large red or green bell pepper chopped

1 yellow or white onion

2 cups chopped cooked chicken breasts

1 10-ounce can cream of chicken soup (do not dilute)

1 10-ounce can cream of mushroom soup (do not dilute)

1 10-ounce can diced tomatoes and green chiles (you can also use tomatoes and jalapenos with good results)

1 teaspoon chili powder

1/2 teaspoon garlic powder

12 6-inch corn or flour tortillas

8-ounces of shredded cheddar or Monterrey Jack cheese (Velveeta Mexican cheese also works well)

 

Directions:

Cook bell pepper and onion in a skillet coated with cooking spray until tender.

Add cooked chicken, soups, tomatoes, chili powder and garlic powder. If using Velveeta cheese, add at this point.

Tear tortillas into pieces and place one layer in a 13x9 casserole dish. Cover with a third of the chicken mixture, top with cheese (if using shredded) and repeat layers twice.

Bake at 350 for 30 minutes or until bubbly.
