Warm-up With Delicious Brunswick Stew

Brenda Knight shares her quick and easy crock pot recipe.

Imagine coming home to the smell of a warm and delicious Brunswick stew in the crock pot. The kitchen will smell like you have been slaving away all day, but it really only took a few quick minutes.

“The best thing about this recipe is that it’s quick,” Brenda Knight said about her delicious and flavorful Brunswick stew recipe.

Knight’s recipe only takes minutes to make because it is made from canned goods. But that does not mean it lacks anything in flavor.

“It’s one of my favorites because everywhere I’ve taken it, everyone always raves about it -- especially when they find out that it’s made from all canned goods,” Knight said.

But if you do not like canned foods, there are other ways to make this great recipe quickly.

“You could buy other pork barbecue (not canned) to use instead,” Knight suggested. “Costco and Sam’s both have already made shredded pork barbecue that would work well too.”

To bring out the best flavor in this stew, Knight suggests cooking it on low for eight hours. She also has a few serving suggestions.  

“I serve it with corn muffins, saltine crackers, oyster crackers or Fritos Scoops and various brands of hot sauce, red pepper flakes and salsa,” Knight added. “It’s bland enough for children and then the adults can sauce it up to their liking.”

Easy Brunswick Stew

Ingredients:

2 large cans chicken

2 small cans barbecued beef

2 small cans barbecued pork

2 16-ounce cans creamed corn

1 16-ounce can corn

1 large can diced tomatoes 

Preparation:

1. Combine all ingredients. (Drain chicken and reserve liquid to use if needed)

2. Cook until heated through. Works really well in a slow cooker, but allow plenty of time for it to cook.

Brenda’s notes:

I use Swanson chunk white meat chicken and substitute barbecue pork for the beef (for a total of four cans) because I don’t like the beef barbecue.
