Observations and corrective actions:

  • Violation of Code: [.03(2)(a)-(n) ] [.03(2)] No person in charge (PIC) present at the begining of the inspection. The PIC/Manager arrived in the middle of the inspection. Person in charge (PIC) shall be on the premises of the food service establishment at all times.  Corrected On-Site.  New Violation.
  • Violation of Code: [.03(5)(j)1&2 ] Employee drink stored above single-use food containers at the server station. Employee drink, without a lid & straw, stored on top of the cold top cooler. Drinks were discarded/removed at the time of inspection. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas, clean linens, and food storage areas. Drinks shall be in a single service beverage cup with a secure lid and straw.  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.07(3)(a) ] No soap at 1 of the kitchen hand sinks. Soap provided at the time of inspection. Each handwashing sink shall be provided with a supply of hand cleaning liquid, powder, or bar soap.  Corrected On-Site.  New Violation.
  • Violation of Code: [.06(2)(o) ] 2 rubber mats hanging/drying on the kitchen hand sink. Mats removed at the time of inspection. A handwashing sink shall be maintained so that it is accessible at all times for employee use. A handwashing facility may not be used for purposes other than handwashing.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw shell eggs above produce in the walkin cooler. Raw chicken stored behind eggplant in the line drawer cooler. Produce moved above eggs, chicken moved in front of the eggplant at the time of inspection. Food shall be protected from contamination by storing raw animal foods below/away from/in front of ready-to-eat foods.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(7)(a)1 ] Food buildup on the egg slicer last used yesterday. "Clean" utensils stored in an unclean food container. Utensils taken to the dish area at the time of inspection. Equipment food-contact surfaces and utensils shall be clean to sight and touch.  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.04(6)(f) ] Foods in the cold top cooler were >41F: feta cheese 48F top of product, 43F bottom of product; cut tomatoes 50F top of product, 41F bottom of product; pans were overstacked; foods prepared 3hrs 35 min ago. Foods transferred to flat pans & placed in freezer to rapidly cool. Potentially hazardous food (time/temperature control for safety food) shall be maintained at 41°F (5°C) or below  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.04(6)(g) ] Potentially hazardous foods prepared >24 hours ago were not date marked: 3 containers of pasta, cooked eggplant, cooked veal, mozzarella. Foods were date marked at the time of inspection. Refrigerated, ready-to-eat, potentially hazardous food (time/ temperature control for safety food) prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, which is including the day of preparation a maximum of seven (7) calendar days from the day the food is prepared if the food is maintained at 41°F (5°C) or below.  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.04(4)(k) ] Cups without handles stored in direct contact with food in the cold top cooler, bulk bin. Scoop handle stored in direct contact with salt in the bulk bin. Cups, scoop were removed at the time of inspection. While not in use, food preparation/dispensing utensils shall be stored with their handles above the top of the food and the container.  New Violation.
  • Violation of Code: [.05(6)(a) ] Ambient air temperature in the line cooler was 44F; foods in cooler were >41F. Damaged flour sifter. Broken wires on 2 fry baskets. Maintain equipment/utensils in good repair.  Repeat Violation.
  • Violation of Code: [.06(2)(r) ] Missing hot water handle at 1 of the kitchen hand sinks. Plumbing systems shall be maintained in good repair.  New Violation.
  • Remarks: YOUR PUBLIC HEALTH PERMIT HAS BEEN SUSPENDED FOR "U" GRADES ON TWO CONSECUTIVE ROUTINE INSPECTIONS. Compliance hearing scheduled for 8:30pm on 3/19/2013: 455 Grayson Hwy, Suite 600, Lawrenceville, GA. Bring completed corrective action plan for all violations. Followup inspection within 10 days. Required additional routine inspection within 60 days. Unwashed produce stored above washed/ready-to-eat produce in the walkin cooler. Ready-to-eat produce moved above unwashed produce at the time of inspection. Food shall be protected from contamination by storing unwashed produce below/away from washed produce/ready-to-eat foods. Dish machine was being serviced at the time of inspection.
