  • Violation of Code: [.05(7)(a)1 ] Ice shoot on soda machine with mold build up. Cleaned at time of inspection. Food contact surfaces must be clean to sight & touch.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(f) ] Hot-held potentially hazardous foods not maintained above 135oF; no time controls/documentation in place. Food below 135 deg. F DISCARDED. Must hold at 135 deg. F or higher.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(d) ] Cooked potentially hazardous foods not cooled from 135oF to 41oF within a total of 6 hours. Rice cooling >6 hrs at 46 deg. F. Rice DISCARDED. Must cool from 135 deg. F to 70 deg. F within 2 hrs and from 135 deg. F to 41 deg. F within 6 hrs.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(e) ] Rice cooling in a covered container in walk in cooler >6 hrs and at 46 deg. F. Yucca cooling in pot at room temperature. Rice DISCARDED. Yucca transferred to thin pan & placed on top shelf of walk in cooler. Facility must utilize a cooling method that facilitates rapid cooling from 135 deg. F to 70 deg. F within 2 hrs and from 135 deg. F to 41 deg. F within 6 hrs.  New Violation.
  • Violation of Code: [.05(3)(g) ] Food thermometer not adequately designed for measuring the temperature of thin-massed foods.
  • Food thermometer must be adequately designed for measuring the temperature of thin-massed foods (example: DIGITAL).  New Violation.
  • Violation of Code: [.05(1)(a) ] Containers for Mojo sauce and hot sauce not easily cleanable. Provide containers that are easily cleanable.  New Violation.
  • Violation of Code: [.06(1)(h),(i) ] No hot water in facility. Facility must supply sufficient hot water.  New Violation.
