Debris Buildup on Soda Nozzles, Failure to Wash Hands and Other Violations Noted During Recent Inspections

The East Metro Health District is tasked with ensuring restaurant compliance with applicable health and safety regulations.

Observations and corrective actions:

  • Violation of Code: [.03(5)(c) ] Two employees put on gloves to handle food without washing their hands first. Had employees remove gloves and wash hands before doning new gloves. Employees must wash hands prior to donning gloves for food prep.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(d) ] Chicken soups and cheese sauce cooling more than 2 hours above 70F. Foods discarded. All potentially hazardous foods must be cooled from 135-70F within 2 hrs and from 70- 41F in 4 hours for a total of 6 hours.  Corrected On-Site.  Repeat Violation.
  • Remarks: Facility closed for third repeat of cold holding. Compliance scheduled for 8 am 2-7-13 at 455 Grayson Hwy Ste 600. 

Follow up inspection was conducted on Feb. 8. All violations were corrected and the restaurant was allowed to reopen. Click here for report.

  • Violation of Code: [.05(7)(a)1 ] Soda nozzles have a buildup of debris. Nozzles cleaned. All food contact surfaces must be kept clean to sight and touch.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(6)(f) ] Hot dogs above 41F. Hot dogs discarded. All potentially hazardous foods must be cold held at 41F or below.  Corrected On-Site.  Repeat Violation.
  • Remarks: Cold holding is a repeat violation if it occurs on the next inspection for the third time facility is subject to closure.

Observations and corrective actions:

  • Violation of Code: [.04(6)(f) ] cheeses and coleslaw on prep line above 41F. Food was discarded. All potentially hazardous foods must be maintained at 41F or below.  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.05(3)(h),(i) ] No test strips for the clhorine based sanitizer. Must have test strips to test sanitizer levels.  New Violation.
  • Violation of Code: [.05(7)(d) ] Outside doors of equipment and area above chicken breading station need to be cleaned. Non food contact surfaces must be kept clean of dirt, dust and debris.  New Violation.
  • Remarks: Second repeat for cold holding, if this violation occurs on the next routine inspection facility will be subject to closure.
  • Make sure to use two clothes to wipe tables.

Observations and corrective actions:

  • Violation of Code: [.07(3)(b) ] At the time of inspection the first handsink in the kitchen, the handsink in the dish area, and the hand sink at the bar did not have papertowels. Papertowels provided at time of inspection. All handsinks must be provided with papertowels at all times.  Corrected On-Site.  New Violation.
  • Violation of Code: [.06(2)(o) ] At the time of inspection the handsink in the dish area had several chemical bottles stored in it. All chemicals removed. Hand sinks should only be used for handwashing.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(m) ] In use wet wiping cloths stored in a sanitizer bucket with concentrations below 100 ppm. Sanitizer buckets were changed to an approved concentration. Wet wiping cloths should be stored in sanitizer buckets with chlorine concentration of 100ppm.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(10)(a) ] After cleaning and sanitizing, equipment and utensils not air-dried. Food containers wet nested on the dish shelves.
  • All equipment and utensils must be air-dried.  Repeat Violation.
  • Remarks: FOOD IN FREEZER FROZEN SOLID. ALL CHEMICAL BOTTLES WERE EMPTY, PIC STATED FACILITY IS NOT LONGER USING BOTTLES. IF BOTTLES TO GET USED BE SURE TO LABEL THEM. SMALL AMOUNT OF ICE BUILD UP BY FREEZER DOOR. REMOVE ICE. Once cans are opened move food to food-safe container. Ceviche listed on menu is not served raw according to PIC. PIC stated that they boil it to at least 145F then marinate it in lime juice due to not being able to get parasite destruction letter.
