Dining out at Dos Copas

Each week we feature a business from our hometown of Dacula.This week learn more about Dos Copas.

After being around for close to 10 years, , located at 2463 Hamilton Mill Parkway Suite 210, came under new ownership in 2006. Matt Pollard, the general manager for the restaurant, started as a server in 2008 and worked his way up to his current position.Β  I recently sat down to talk to Pollard about the restaurant.

Patch: How did Dos Copas get it's start?

Matt: Dos Copas has been in this location going on 15 years. About five years ago it was bought from the previous owners by two brothers Paul and Flay Dalrymple. They have since put a spin on the traditional mexican by adding a fresh zest, baja theme. Everything in the kitchen is made from scratch.

Patch: What is the best aspect about managing Dos Copas?

Matt: The freedom to try anything. By using trial and error we can see what works for this location specifically when it comes to entertainment, food and drinks. We're also very involved in the community with all of the local schools and churches. Dacula is very behind us. People that come in on a regular basis is what is really special about Dos Copas. Seeing those loyal patrons that come in all of the time it's remarkable to see so much love and passion from the community.

Patch: What is the most challenging aspect of managing the restaurant?

Matt: Staying ahead of the curve. We're first at a lot of things. We spend a lot of late hours, a lot of meetings, a lot of time evolving and trying to continue with the entrepreneurship of being first in the business. We do one thing after another whether it be a small plates menu, entertainment or drinks, we're very innovative and we're always working.

Patch: What makes Dos Copas unique?

Matt: It's one of a kind. It's the food and the people. There's a lot of food around us that have tried to get where we are but nobody does the ingredients like we do or the freshness. Our ideas are monumental and we pride ourselves on that. We're a great family place. We love our families that come here and we offer a fun spot for the kids to come and enjoy themselves. It gives the parents a little bit of a break kind of like a date night.

Patch: What makes the Dacula community special?

Matt: Dacula is very close and tight knit. There's a lot of kids in this area and a lot of schools and we involve ourselves with a lot of the extracurricular activities that go on. We like to involve ourselves and they like to commit to us and show us love and show us pride and support us in what we do.

Dos Copas is open from Monday through Saturday from 11 a.m. until 2 a.m. and Sunday from 11 a.m. until midnight. Live entertainment and specials are scheduled throughout the week as well as a monthly theme party. The theme for July is Salute to the Troops.
