Mold-Like Buildup in Ice Machine, Raw Meat Stored Above Cooked Food and Other Violations

Observations and corrective actions:

  • Violation of Code: [.04(3)(a) ] Potentially hazardous foods that were delivered during the inspection were >41F: A box of American cheese containing multiple sleeves were 44F. Training provided & food was declined & returned to the delivery person at the time of inspection. Refrigerated, potentially hazardous food (time/temperature control for safety food) shall be at a temperature of 41°F (5°C) or below when received. Upon receipt, potentially hazardous food (time/ temperature control for safety food) shall be free of evidence of previous temperature abuse.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw fish stored above produce in the walkin cooler. Raw pork sausage stored above garlic and cheese in the reachin cooler. Raw animal foods moved away from produce & ready-to-eat foods at the time of inspection. Food shall be protected from cross contamination by: 1) storing raw animal foods below/away from produce/cooked/ready-to-eat foods. **IF THIS ITEM IS MARKED OUT OF COMPLIANCE ON THE NEXT INSPECTION, THE PERMIT MAY BE SUSPENDED FOR 3RD REPEAT VIOLATION.  Corrected On-Site.  Repeat Violation.
  • Remarks: Mold-like buildup inside the ice machine. Ice machine cleaned at the time of inspection. Food contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil or mold.

Observations and corrective actions:

  • Violation of Code: [.04(4)(w)(1) ] Raw fish stored above cooked pork in the walkin freezer. Raw pork stored above cooked pork in the walkin freezer. Unwashed produce stored above sauces & washed produce in the walkin cooler. Employees were preparing raw chicken, raw beef & raw shrimp on the prep tables while saran wrap, foil, utensils, food (food coloring, seasonings) were stored on the storage shelves below = contamination risk. Raw fish stored above spring rolls & cooked duck in the chest freezer. Pieces of raw shrimp observed inside the produce prep sink, while onions were stored on the adjacent prep sink drainboard. Raw animal foods moved below ready-to-eat foods. Unwashed produce moved below/ away from ready-to-eat foods & washed produce. Food, equipment, utensils, foil & saran wrap moved away from prep table shelves where raw animal foods were being prepared. Onions removed from produce prep sink; produce sink will be washed/rinsed/sanitized. Food shall be protected from cross contamination by: 1) storing raw animal foods below/away from produce/cooked/ready-to-eat foods; 2)storing unwashed produce below/away from washed produce, ready-to-eat/cooked foods; 3) preparing raw animal foods away from ready-to-eat foods, utensils, equipment, linens; 4) using the meat sink to prepare raw animal foods; not using the produce sink for raw animal food prep.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(3)(g) ] No small-diameter probe thermometer available for measuring temperatures of thin-massed foods. A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.  New Violation.
  • Violation of Code: [.05(6)(a) ] Broken wires on fry basket, strainer. Rusted shelves in the walkin cooler. Maintain equipment/utensils in good repair.  New Violation.
  • Violation of Code: [.05(7)(d) ] Food buildup on the walkin cooler shelves. Grease/food buildup on the cookline equipment. Ice buildup inside the reachin freezer used to store/chill drinking glasses. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.  New Violation.
