Permit Reinstated After Dacula Restaurant Improves Score From 55 to 89

Failure to post most recent health inspection report among the violations noted during the reinspection.

The East Metro Health District is tasked with ensuring restaurant compliance with applicable health and safety regulations. The following restaurant scores are the most recent scores posted on the East Metro Health District website as of March 26.

Observations and corrective actions:

  • Violation of Code: [.04(6)(f) ] Potentially hazardous foods in the upright cooler, next to the upright freezer, were >41F (see temperature chart). Foods 43F or less were transferred to another cooler; foods 44F or higher & held since yesterday, were discarded at the time of inspection. Potentially hazardous food (time/temperature control for safety food) shall be maintained at 41°F (5°C) or below .  Corrected On-Site.  New Violation.
  • Violation of Code: [.10(2)(g) ] The most current inspection report was not posted in the facility; the inspection report from 08/23/12, 100/A was posted. The most current inspection report was posted at the time of inspection. The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet (15') of the front or primary public door and between five feet (5') and seven feet (7') from the floor and in an area where it can be read at a distance of one foot (1') away.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(a) ] Air temperature blowing from the fan in the upright cooler, next to the upright freezer, was 45F; multiple foods were >41F. PIC adjusted cooler temperature at the time of inspection. Maintain equipment in good repair.  New Violation.
  • Violation of Code: [.05(6)(d),(e) ] Dish machine dispensing <50ppm chlorine sanitizer; not in active use. Ensure dish machine is properly working & dispensing sanitizer at an approved concentration.  New Violation.
  • Remarks: Missing date marks on ricotta cheese & cannoli cream. Foods were dated at the time of inspection. Refrigerated, ready-to-eat, potentially hazardous food prepared and packaged by a food processing plant shall be clearly marked, at the time the original container is opened in a food service establishment and if the food is held for more than 24 hours, to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, which is including the day the original container is opened, a maximum of seven (7) calendar days after the original container is opened, or the useby/sell by/ expiration date, whichever comes sooner, if the food is maintained at 41°F (5°C) or below.

  • Violation of Code: [.04(6)(g) ] Refrigerated, ready-to-eat, potentially hazardous food prepared and held in the establishment for more than 24 hours not clearly marked to indicate the date by which the food must be consumed, sold, or discarded. Multiple containers of cooked chicken not date-marked (made on the 14th). Facility date-marked food.   • Violation of Code: [.05(1)(i) ] Shelf below table rusting. Nonfood-contact Surfaces: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion resistant, nonabsorbent, and smooth material.  New Violation.
  • Violation of Code: [.05(2)(h) ] Lid to storage bin cracked. Nonfood-contact Surfaces: Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.  New Violation.
  • Violation of Code: [.06(5)(o),(p) ] Dumpster missing drain plug. Using Drain Plugs: Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place.  New Violation.
  • Violation of Code: [.06(5)(b) ] Grease bin stored on soft ground. Outdoor Storage Surface: An outdoor storage surface for refuse, recyclables, and returnables shall be constructed of nonabsorbent material such as concrete or asphalt and shall be smooth, durable, and sloped to drain.  New Violation.
