  • Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw hamburgers stored above tortillas, raw fish in the cookline upright cooler. Raw beef stored above raw shrimp in the line drawer cooler. Unwashed produce stored above ready-to-eat garlic cloves, craisins. Raw beef moved below tortillas/next to fish. Raw beef moved below raw shrimp. Unwashed produce moved below ready-to-eat foods. Food shall be protected from cross contamination by: 1) storing raw animal foods below/away from produce/cooked/ready-to-eat foods; 2) storing/ separating raw animal foods by the minimum cooking temperature; 3) storing unwashed produce below washed produce/ready-to-eat foods. Corrected On-Site.  Corrected On-Site.  New Violation.
  • Violation of Code: [.10(2)(g) ] Most current inspection report not prominently posted in public view; it was set on top of a counter by the front door. Inspection report was posted at the time of inspection. The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet (15') of the front or primary public door and between five feet (5') and seven feet (7') from the floor and in an area where it can be read at a distance of one foot (1') away.  Corrected On-Site.  New Violation.

Observations and corrective actions:

  • Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw chorizo above cooked pork, mushrooms in the line cooler. Raw bacon-wrapped beef above raw fish in the upright freezer. Raw hamburgers, raw turkey above raw scallops in the upright freezer. Raw tilapia above ready-to-eat ham & hot dogs in the walkin cooler. Unwashed produce above washed/cut/ready-to-eat produce in the walkin. Raw animal foods were organized by the minimum cooking temperatures. Raw animals foods moved below/away from cooked/ready-to-eat foods. Ready-to-eat produce moved above unwashed produce. Food shall be protected from cross contamination by: 1) storing raw animal foods below/away from produce/cooked/ready-to-eat foods; 2) storing/separating raw animal foods by the minimum cooking temperature; 3) storing unwashed produce below/away from washed produce/ready-to-eat foods. **IF THIS ITEM IS MARKED OUT OF COMPLIANCE ON THE NEXT INSPECTION, THE PERMIT MAY BE SUSPENDED FOR 3RD REPEAT VIOLATION.  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.05(7)(a)1 ] Food buildup on utensils/equipment stored clean: fry baskets, pans, dicer. Utensils/equipment taken to the dish area to be washed/ rinsed/sanitized. Equipment food-contact surfaces and utensils shall be clean to sight and touch.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(10)(a) ] Food containers wet nested on dish shelves. After cleaning and sanitizing, equipment and utensils shall be air-dried.  Repeat Violation.
  • Violation of Code: [.05(7)(d) ] Food buildup & ice buildup in the upright freezers. Grease/food buildup on the cookline equipment. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.  New Violation.
  • Remarks: Produce stickers left on washed/ready-to-eat avocados. Remove produce stickers while washing produce. Broken lid on the dumpster. Dumpster door propped open. Spilled trash on the ground around the shared dumpsters. Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside the food service establishment. A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items and clean. Fish used in the ceviche is boiled/fully cooked. All foods offered in the buffet use time as a public health control. Steaks, eggs are cooked to order. Hamburgers, fish are only offered fully cooked.

  • Violation of Code: [.06(2)(o) ] Equipment parts/items in front handwashing sink. Items removed. Handwashing sink is only for handwashing.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(10)(e) ] Black containers (bottom of shelf) with residue on exterior surface. Store equipment where they will be protected from contamination.  New Violation.
  • Violation of Code: [.05(6)(r) ] Re-using Minute Maid containers for shake mix. May not re-use single service/use containers.  New Violation.
  • Violation of Code: [.05(1)(a) ] Food stored in open hermetically sealed containers. Food must be transferred into an approved container once hermetically sealed container is opened. See rule.  New Violation.
  • Violation of Code: [.07(5)(a),(b) ] Floors dirty throughout kitchen. Must clean floors as often as is necessary to maintain clean.  New Violation.

  • Violation of Code: [.03(3)(a)-(d) ] Certificate for the certified food safety manager, Geoff Bryant, a copy. Facility must post the original copy. Will recheck in 3-10 days.  New Violation.
  • Remarks: Reviewed dented can assessment with person in charge. Left sneeze guard does not appear to be effective. However, this is an existing facility.
