Remarks: Two employees observed touching ready to eat, already cooked berry biscuits with bare hands while placing these items on tray to be reheated. Employee observed touching raw frozen chicken with gloved hands to place into the fryer basket, the fryer basket was then lowered with the same gloved hand touching the handle of the fryer basket. Cut lemons for consumer self service on display at drink station in container with lid with no protection from contamination provided.

Remarks: The person in charge at the time of inspection could not identify the 5 symptoms to exclude workers and other questions regarding the employee health policy. Raw chicken stored above raw pork ribs in the walk in cooler, raw shrimp portioned into bowl that had raw beef debris present. Several potentially hazardous food items were found cooling over 2hrs and were above 70 degrees. Two of the fryer baskets were found with metal pieces missing or broken.

Observe employee use glove, take it off, and proceeded to use the same glove for food prep. Observed several pans stored clean with food residue and other debris.

REHEAT THE MEATBALLS TO GREATER THAN OR EQUAL TO 165 DEGREES F. A PROBE WAS NOT USED TO CHECK THE INTERNAL TEMPERATURE OF THE MEATBALLS INITIALLY.
