Slicer and Dicer Stored With Food Debris, Hood Vents Observed With Dripping Oil and Other Violations

A look at the most recent Dacula restaurant inspections.

The health department is tasked with ensuring restaurant compliance with applicable health and safety regulations. The following restaurant scores are the most recent scores posted on the Gwinnett, Newton, Rockdale Health Departments website as of May 14.

Observations and corrective actions:

  • Violation of Code: [.05(7)(a)1 ] Tomato slicer and lemon dicer put away with food debris. Slicers cleaned and sanitized at time of inspection. All food contact surfaces must be kept clean to sight and touch.  Corrected On-Site.  Repeat Violation.

Observations and corrective actions:

  • Violation of Code: [.04(6)(g) ] Observed two containers of hotdogs and one container of grilled chicken in 1-door cooler next to grill with expiration date of 5/6 and 5/7. PIC stated these items were prepped yesterday but the date was not changed. Had PIC change date marks to proper dates. Foods should be date marked when prepped and discarded after 7 days.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(k) ] 1.)Cups with no handle being used as scoops. Cups removed from use in bulk containers. In bulk containers scoops must be stored with the handle above the top of the food. 2.) Tongs being stored in room temperature water. Tongs removed from water. If in-use utensils are stored in water the temperature must be 135oF or above.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(a) ] Several lids found cracked. Lids discarded. Equipment must be maintained in good repair.  Corrected On-Site.  New Violation.

Observations and corrective actions:

  • Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw chicken and raw beef stored over raw shrimp and raw shrimp stored with shrimp toast in reach in cooler. All raw animal products must be stored according to minimum cook temperature. Freezer was rearranged. **Please be advised this is a repeat violation. If marked on the next routine inspection permit may be suspended.**  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.04(4)(d) ] Spices, oils, wines, and sauces at cook line not labeled with common name. All foods taken from their original container must be labeled with common name. Facility was advised on last routine inspection. All items were labeled during inspection.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(4)(k) ] Scoops stored with handles down in food. Knives stored between prep tables. Utensils must be stored with handle up or on a clean dry surface. Handles were turned up and knives were placed on prep table.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(6)(r) ] Soy sauce buckets being reused for food storage. Single use items may not be reused for food storage.  New Violation.
  • Violation of Code: [.07(5)(d) ] Hood vents observed with dripping oil. Ventilation system must be cleaned at a frequency to prevent accumulations which may contaminate foods. Increase cleaning frequency. **Please be advised this is a repeat violation**  Repeat Violation.
  • Violation of Code: [.07(3)(h) ] Observed employee purse, keys, and cell phone stored on prep table. Employee belongings must be stored in a manner to prevent contamination of foods and food contact surfaces. Items were moved up front.  Corrected On-Site.  Repeat Violation.
  • Remarks: Observed grinder with food debris on it. Please ensure that all food contact surfaces are clean to sight and touch. Grinder was cleaned during inspection.
