What's Cookin'?

Bring dinner back to the table!

Instead of rushing through the drive thru and grabbing dinner on the go, why not have dinner waiting for you at home when you walk through the door?

If you're like me, juggling your work week, staying active and eating right might be a little hard to do....especially when you add friend's, spouse's and/or children's busy schedules into the mix!

Why not bring dinner back to the table?  It just takes a little pre-planning.  In the end, not only will you save on extra calories, but you'll save what's in your wallet as well!

Have a meal waiting for you when you walk through the door at the end of a busy day.  For the first week or two commit to just one or two dinners at home.  If that works for you, four to six home cooked meals could save "you" AND your money!

Try this great Thai Chicken recipe for a quick and healthy option.

Thai Chicken

  • 2 1/2 pounds chicken breast (cut into bite size pieces)
  • 1 cup hot salsa (try organic or look for salsa with lower sodium and sugar)
  • 1/4 cup all natural peanut butter 
  • 2 tablespoons lime juice
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon minced fresh ginger
  • Hot cooked brown rice
  • 1/2 cup peanuts, chopped
  • 2 tablespoons chopped fresh cilantro

Place chicken in slow cooker.  Combine salsa, peanut butter, lime juice, soy sauce and ginger; pour over chicken.

Cover; cook on LOW 8 to 9 hours or on HIGH 3 to 4 hours, or until chicken is no longer pink in center.

Serve chicken and sauce over brown rice; sprinkle with peanuts and cilantro; add a small side salad (optional).

Now that you've saved a little time and eaten a nutritious meal, why not head to the local park and take a walk or dare I say, run?
