Altered Inspection Report, Hood Filters With Dripping Oil, Expired Fanta and Other Violations

A look at recent Dacula, Ga. restaurant inspections.

Observations and corrective actions:

  • Violation of Code: [.07(6)(g) ] Quat sanitizer in sanitizer buckets at greater than 500ppm. Package indicates concentration o0f 200ppm for food contact surfaces. Quat sanitizer must be maintained at concentration indicated on packaging. Quat sanitizer was diluted to be 200ppm.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(6)(b) ] 3 spray bottles observed unlabeled. Working containers must be labeled with common name. All bottles were labeled.  Corrected On-Site.  New Violation.
  • Violation of Code: [.04(8)(b) ] Milk 12/26, Coke zero 11/04, orange juice 07/22, and Fanta orange 11/22 stored on shelves to be used. All foods must be discarded by expiration, use by or sell by dates. All were discarded.  Corrected On-Site.  New Violation.

Observations and corrective actions:

  • Violation of Code: [.03(5)(c) ] Employee in the sald prep area did not wash hands prior to putting on gloves for food prep. Before donning gloves she arranged items to work with and printed stickers. Had her stop remove gloves and wash hands. Employees must wash hands immediately prior to donning gloves for food service.  Corrected On-Site.  Repeat Violation.
  • Violation of Code: [.03(5)(b) ] Employee put soap on hands then rinsed off, he did not vigorously rub for 10-15 seconds. Had employee stop and rewash hands properly. Employees must wet hands with warm water, apply soap and vigorously rub hands together for at least 10-15 seconds then thoroughly rinse hands.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(5)(f) ] Both mop buckets had mops stored in water. Mops were hung to dry. Mops must be hung to dry in between use.  Corrected On-Site.  New Violation.
  • Remarks: Make sure drink machines are cleaned at least once every 24 hrs.

Observations and corrective actions:

  • Violation of Code: [.07(6)(l) ] Observed can of Raid and Home Defense bug spray being stored in facility. Both labeled for home use only. Only pesticided indicated to be used in food service establishments may be used. Both were discarded during inspection.  Corrected On-Site.  New Violation.
  • Violation of Code: [.10(2)(g) ] Inspection report from 12/14/11 posted. Inspection report had been altered to say 12/14/13. Most recent inspection must be posted at all times. Previous inspection report was voided.  New Violation.
  • Violation of Code: [.05(6)(r) ] Soy sauce buckets being reused for food storage. Single use items may not be reused for food storage. **PLEASE NOTE THIS IS A REPEAT VIOLATION**  Repeat Violation.
  • Violation of Code: [.05(10)(g)(1)&(3) ] Single use containers stored out of protective sleeve with food surface up. Single use items must be protected from contamination by being inverted or stored in protective sleeve received in. All were inverted during inspection.  Corrected On-Site.  New Violation.
  • Violation of Code: [.05(7)(a)2,3 ] Sides of fryers and wok station observed with accumulation of grease. Equipment must be cleaned at a frequency to prevent accumulations.  New Violation.
  • Violation of Code: [.07(5)(d) ] Hood filters observed with dripping oil. Ventilation system must be cleaned at a frequency to prevent accumulations. Increase cleaning frequency. **PLEASE NOTE THIS IS A REPEAT VIOLATION**  Repeat Violation.

  • Violation of Code: [.07(3)(a) ] No handsoap provided at front handsink. Hand soap must be provided at handsinks at all times. Handsoap was placed at sink.  Corrected On-Site.  New Violation.
  • Violation of Code: [.06(2)(o) ] Observed employee pouring out container of water and refilling container at handsink. Handsinks must only be used for handwashing. Employee was advised and moved to back dish sink.  Corrected On-Site.  New Violation.
  • Remarks: Violation of Code: [.04(4)(q) ] Buckets of chicken stored on floor at beginning of inspection. Food must be stored at least 6 inches above the floor. Buckets were placed on crates.  Corrected On-Site.  New Violation.
