Remarks: Employee drinks, in multi-use cups & bottles, were stored on the bar counter next to food & on top of the server station microwave. Drinks removed at the time of inspection. Raw chicken stored above raw fish, raw pork in the upright freezer. Raw beef & raw burgers stored above churros, pizza, French fries, raw shrimp, octopus in the upright freezer. Unwashed produce stored above cut/ready-to-eat produce (onions, peppers, tomatoes) in the walk-in cooler. Foods organized & separated at the time of inspection. Food encrusted on items stored clean: wire baskets, strainer, masher, knives, knife holder. Multiple foods held >41F in the line cold-top/reach-in cooler and in the 2 door upright cooler. Wiping cloths stored in 200ppm chlorine sanitizer solution. Sanitizer diluted at the time of inspection. Using gloved hands, employee handled raw beef, a soiled cloth towel & then chicken tongs. Line cold-top/reach-in cooler not properly working. Back kitchen door doesn't close tight (observed 1 fly in the kitchen).
