Remarks: Observed employee handle raw fish, discard gloves, and proceed to handle ready-to-eat foods. Handsinks in kitchen being used to rinse off thermometers, knives and to fill a bowl with water. Discussed with employees that hand sinks are to be used for handwashing only. Thermometers used to take temperatures of cold-holding potentially hazardous foods (PHFs), hot-holding PHFs and cooked animal foods not cleaned between uses. Cold-held potentially hazardous foods not maintained below 41oF; no time controls/documentation in place. Fruit/vegetable sink being used to wash raw lobster.
