  • Violation of Code: [.05(6)(a) ] Long open top cooler with condensate collecting on the bottom. Gasket on cooler torn. Must maintain in good, working condition.  New Violation. 
  • Violation of Code: [.05(1)(i) ] Wire shelf in dressing cooler rusted/worn. Shelf on table (with dirty dishes) rusted, in poor condition. Must be smooth, durable, nonabsorbent, & easily cleanable.  New Violation.
  • Violation of Code: [.07(5)(a),(b) ] Coving along wall damaged, missing. Must maintain in good repair.  New Violation.
  • Violation of Code: [.07(5)(k) ] Flies in the kitchen. Must control the presence of pests in the establishment.  New Violation.

Observations and corrective actions: 
  • Violation of Code: [.04(6)(e) ] Butt not submerged in ice for efficient cooling. 86 deg. F at 1HR 57MIN. Pork butt pulled and reheated. Must reheat to 165 deg. F within 2 hrs. Bags of chopped chicken sealed shut. Chicken wing cooling in covered container. Chicken in bags & chicken wings vented at time of inspection & moved to top shelf. Facility must utilize a cooling method that facilitates rapid cooling fron 135 deg. F to 70 deg. F within 2 hrs and 135 deg. to 41 deg. F within 6 hrs. Vented food in walk in cooler that is actively cooling may not be stored under source of contamination. Cover food once it has cooled properly (i.e., strips, wings covered at time of inspection).  New Violation.
  • Violation of Code: [.05(10)(e) ] Single use trays in back storage room not covered or in original container. Single use articles/single service articles must be protected from contamination - keep in original container.  New Violation.
  • Violation of Code: [.06(2)(r) ] Kitchen handwashing sinks & warewashing sinks without cold water. Hot water runs through both cold & hot fixture. **For the safety of your employees & to encourage proper handwashing, ensure tempered water at least 100 deg. F runs through fixture. Plumbing system must be maintained.  New Violation.

Observations and corrective actions:

  • Violation of Code: [.03(5)(j)1&2 ] Employee beverage in approved container stored on cutting board in front of grill. Employee beverages must be stored in a single use container with a lid and straw and must be stored away from food, prep areas, single use container, clean equipment, and clean linen. Beverage was moved to approved area.  Corrected On-Site.  New Violation. 
  • Violation of Code: [.05(6)(r) ] Waffle syrup containers being reused to store salt and pepper. Single use items may not be reused for food storage. Salt and pepper were moved to approved container.  Corrected On-Site.  New Violation.
  • Violation of Code: [.07(5)(k) ] Observed flies and fruit flies throughout facility during inspection. Last pest control treatment at the beginning of July. Pest must be controlled to minimize their presence. Fly curtains have been ordered for back door and message was left with pest control company.  New Violation.
